This pickled beets recipe is adapted from an old family cookbook; one in which ingredients are mentioned, however, quantities are not. The dishes created from this cookbook were always great, but creating them with success now without having quantities calls for creative guesswork.

After a little experimenting, we determined the measurement proportions required to achieve the traditional pickled beets flavor we recall so fondly. Here, measurements are calculated based on the quantity of red beets we collected from our garden one day this summer.
